North cuisine is a part of North India which includes the states of Jammu Kashmir, Himachal Pradesh, Punjab, Chhattisgarh, Uttar Pradesh and Delhi .North Indian cuisine is far different from north eastern foods and South Indian food. Today we are going to share some information about North Indian breakfast that will be healthier and easy to cook which can be served in kidd’s tiffin and enjoy as  breakfast.

1. Poha


Poha  is a quick breakfast or snack made of beaten rice or flattened rice. It can be eaten not only for breakfast but also for a quick dinner or lunch box. Poha is usually eaten alone but it can also be served with fresh curd or yogurt. It is a kids friendly recipe and can also be packed in the school lunch box.

Poha Recipe:

- Rinse the poha in normal water till they soften.
- They should loose their crunchiness when you break it between your fingure they should easily get crushed or mashed after keep aside.
- Add some sugar, salat and turmeric in poha and mix gently.
 -Dry some peanuts  in a pan till they become crunchy.
- After that heat some oil in same pan.
- Crackle the mustard seeds first
- Add some onions till they become translucent.
- Add some curry leaves and green chillies.
  Saute for a minute.
- Add the roasted peanuts.
- Add the poha in them.
- Cover and steam the poha for 5 minutes on a low flame.
- Check after 2-4 minutes when the poha is cooking and give a stir again, again close the pan and let    it cook.
- Switch off the fire remain it covered for 2 minutes.
- sprinkle some lemon juice, coriander leaves.
- Give a gentle stir and served poha with hot tea.

2. Gobi Paratha


  Gobi paratha is another popular dish in punjab along with aloo paratha, paneer paratha
  and onion paratha. Gobi paratha is often  made for breakfast in punjab homes and
  delhi as well served in restaurant and punjabi dhabas.

Gobi paratha Recipe: 

- Take 2 cups of Wheat flour and 1 tsp salt mix well. Pour 1 cup water little by little and knead  the dough to a smooth soft dough.cover and allow the dough rest for 10-20 mins.
Meanwhile, make the stuffing for Gobi Paratha. Grate the Gobi(cauliflower) and then add chilli powder, chat masala, chopped green chilli and salt, mix well. Mix the gobi stuffing well. If you want, you can add more Indian Spices like garam masala or amchur powder etc…
Roll them into lemon sized balls and keep aside. Gobi Stuffing is ready now, let us make paratha out of the gobi stuffing.

- Meanwhile, make the stuffing for Gobi Paratha. Grate the Gobi(cauliflower) and then add chilly powder, chat masala, chopped green chilly and salt, mix well. Mix the gobi stuffing well. If you want, you can add more Indian Spices like garam masala or amchur powder etc…

- Roll them into lemon sized balls and keep aside. Gobi Stuffing is ready now, let us make paratha  out   of the gobi stuffing.

- Let's  stuff the paratha with Gobi masala with cheese stuffing. Now take the dough, dust wheat flour and divide them into equal sized balls with a rolling pin, roll the dough to circles and then flatten it. Place the stuffing on one of the rolled dough cover it.Sprinkle some flour and roll the stuffed paratha with the rolling pin.Flatten it like chapati. Stuffed Gobi Paratha is ready for cook now.
Heat the Tawa and cook the paratha  applying a spoon of ghee. Flip the other side and cook it. Turn over and flip, till it cook evenly.

3. Besan cheela





Besan cheela is a savory and tasty pancake made with gram flour , spices and herbs. Granted veggies can also be added to make the chilla recipe more nutritious. Besan cheela is a healthy option for breakfast in the sense of protein along with vegetables. We can add paneer to increase the protein making it more suitable for kids.

Besan Cheela Recipe:

- take 1 cup besan in a mixing bowl.
 add ¼ cup finely chopped onion, ¼ cup finely chopped tomatoes, ¼ cup chopped coriander leaves, ½  tsp finely chopped ginger, ½ to ⅔ tsp finely chopped green chilies. do chop all the above ingredients finely. if chopped even in slightly large pieces, it becomes difficult to spread the chilla in the pan.
now add the following spices – 2 to 3 pinches of turmeric powder, ½ tsp carom seeds/ajwain and ¼ tsp red chili powder. you  can use cumin seeds if you  have not carom seeds. also add salt as per taste.
add ½ cup water first.

- with a wired whisk begin to mix everything. if the batter looks thick, then add 1 to 3 tbsp more water. i overall added ⅔ cup water. depending on the quality and texture of besan, addition of water will be more or less.

 - mix to a smooth flowing consistency in the batter. break lumps if any while mixing batter.
 heat a tawa  on a low flame. you can use an iron tawa or a non stick pan. spread a bit of oil on the tawa. let the pan become medium hot. then take a ladle full of the batter and pour on the pan.
gently with the back of the ladle, begin to spread the batter.
 -  spread lightly and gently so that the cheela does not break.
 on a low flame cook the cheela till the top begins to look cooked.
 then drizzle ½ to 1 tsp oil on the chilla at the edges and all around. skip oil if you want to prepare oil free chilla.
- continue to cook till the base gets light golden.
-  flip and now cook the other side of cheela.
-  cook this side till you see golden spots on the besan cheela.
 - fold and serve chilla hot or warm. besan chilla are best had hot. but if you are not able to serve them hot, then place them in a casserole. they remain warm and can be served later.
 serve besan cheelas plain or with mint chutney or any chutney of your choice or with tomato sauce.

4. Chana Kulcha

Chana kulcha is always a hit at the breakfast table. No wonder chole is popular and makes for the simplest accompaniment with kulcha for your morning meal. Y ou can try this delicious dish in your breakfast to make everyone happy.




 Chana kulcha Recipe: 

- Soak chickpeas in water with baking soda and keep them overnight.
For best taste boil them in water on low flame for 6- 7 hours.
Now add salt, mango powder, red chilli powder, black pepper powder, cumin powder, powdered clove, dry ginger, coriander powder, carrom powder and powdered cinnamon.
Mix it well and serve hot with kulchas.



5. Plain bread pakora without stuffing


 This is an easy and quick method as no stuffing is made for bread pakoda. when we need to have some hot bread snack quickly, then i make plain bread pakora. take the bread slices and  dipped in besan (chickpea flour batter) spiced with ajwain, red chilli powder, asafoetida, salt and deep-fried.
